The Dormilona house wines are just so straightforward and easy drinking. This rosé made from certified organic Merlot & Shiraz from Wilyabrup is super light, playful and crisp. A touch of skin contact then pressed straight to tank for ferment. Lots of batonnage (stirring settled lees back into wine) to check in some mid weight texture, full malo (softer-tasting acid), then racked off to settle before bottle.
